    A cookie with health benefits? What a wild concept. But, it's true. These 25 minute hemp cookies are full of wholesome, clean ingredients that offer your body nourishment. That makes them a much healthier alternative to grocery store cookies that are packed with artificial ingredients, chemicals and a whole lot of sugar. So, let’s get baking, shall we?

    Here's what you'll need for these easy, healthy hemp seed cookies.

    • Almond Butter: This nut butter works well as a healthy substitute to butter in baking. As an added bonus, the naturally sweet flavour in almond butter means you can get away with less sweetener.
    • Coconut Palm Sugar: This natural sweetener has a similar taste to brown sugar, with hints of caramel.
    • Eggs: This will give the cookies structure, color and flavour. But, most of all, eggs will help bind the ingredients together to prevent your cookies from falling apart.
    • Hemp Seeds: The star ingredient in this recipe. Hemp seeds will add a nutty flavour to your cookies. They are often used as a replacement for walnuts or pine nuts in baking.
    • Vanilla Extract: Adds a subtle, delicious flavour of vanilla to the cookie.
    • Cinnamon: A warming spice.
    • Salt: Enhances the flavour of all your other ingredients, making a more delicious cookie.
    • Stevia Chocolate Chips: Optional, but who doesn't like a chocolate chip cookie. I use Lily's Dark Chocolate Chips because they are a healthier alternative.

    Nutritional Benefits

    Don’t get it twisted. There is nothing wrong with indulging in the occasional classic chocolate chip cookie. But, this lightened up version is nourishing, filling and lower in sugar. That means you can snack on these without feeling immediately sluggish afterward.

    What makes this hemp cookie healthier?

    • Baking with hemp seeds: Hemp hearts are truly a nutritional powerhouse. Unlike many plant-based foods, they carry all nine essential amino acids, which our body needs to build, grow and and repair tissue. They are also high in omega-3 fatty acids, and have the ideal balance of omega-3s and omega-6s, helping reduce inflammation in our bodies. Further, they're rich in fibre, which helps you feel full for longer and ultimately leads to less snacking between meals. On top of all that, they're full of vitamins and minerals our body needs to function. You can't go wrong with hemp seeds.
    • The use of natural sweeteners: The truth is, coconut sugar is still sugar. So, I don't want to encourage you to use it in excess. That said, palm sugar is unrefined, which means it has vitamins and minerals, which table sugar does not. It's extracted from the sap of the Coconut Palm and contains iron, zinc, calcium, potassium and antioxidants. It also has a lower glycemic index than regular sugar due to a fibre called inulin. This means you'll see less of a blood sugar spike after consumption. My rule with sugar is to eat it sparingly and to choose a natural variety when I do. So, as far as sugar goes, this is the better option.
    • Lily's Dark Chocolate Chips: These dark chocolate, sugar-free chocolate chips are a healthy swap for the traditional variety and contain only 6% of the calories. They are sweetened with a sugar alcohol called erythritol. It is FDA approved and shown to be a safe alternative.

    Instructions

    Let’s break it down step by step to take any guesswork out of this healthier chocolate chip hemp seed cookie recipe.

    • Preheat the oven to 350 degrees F.
    • In a large glass bowl combine almond butter, coconut palm sugar and egg with hand mixer.

    • Add in hemp seeds, vanilla extract, cinnamon, salt, and chocolate chips if using. Stir gently until combined. Dough consistency should be sticky.

    • Place parchment paper on a baking tray.
    • Use a cookie scoop to create 15 dough balls and place on parchment paper.

    • Score each cookie with a fork to flatten. Optionally, sprinkle with additional hemp seeds.
    • Bake for 17 minutes.
    • Remove and let cool on the cooling rack for 10 minutes. Then place in an airtight container and store on the counter for up to four days.

    • Let cool completely. The cohesiveness of low-carb baked goods improves after being cooled. So, please resist digging in to the cookies too soon or you'll end up with a pile of crumbs.

    How to store hemp heart cookies.

    Hemp cookies can be stored in an airtight container at room temperature for up to four days. Make sure to cool cookies completely on a cooling rack before placing in the container.

    Can you freeze hemp seed cookies?

    Yes. Place cookies in an airtight container. They can be stored in the freezer for up to two months.

    Do hemp cookies make you high?

    No, hemp seed cookies don't make you high. They are non-psychoactive, meaning it is impossible to get high from consuming them and they will not cause you to fail a drug test.

    Recipe Variations

    You can follow my recipe as is for delicious chocolate chip hemp cookies. Or, you can use some of these swaps to build your own perfect cookie. Here are a few delicious options.

    • Swap coconut sugar for maple syrup: Like coconut palm sugar, maple sugar is reduced from sap. It has a similar flavour profile, with notes of caramel. If don't have palm sugar on hand, maple syrup can be used. It works as a 1:1 substitute, so use ½ cup of maple syrup in this recipe.
    • Replace chocolate chips: If you're not a chocolate chip cookie fan, you're crazy. But, I still got your back. Replace the chocolate chips with raisons, craisins, or any other dried fruit. Replace with a quantity that suits your taste buds.

    • Hand Mixer: A great tool to ensure ingredients are fully mixed together.
    • Cookie Scoop: This isn't a necessity, but works great to make evenly sized cookies.
    • Rimmed Baking Sheet: To avoid any spillover during baking, go with the rimmed sheet.
    • Parchment Paper: I've recently been buying pre-cut parchment paper, which is a real time saver!
