What is Chicken crust pizza?
It's exactly what it sounds like. It's a pizza with a crust made out of chicken that's topped with whatever ingredients you like.
For this recipe, I wanted to create a "margherita pizza", so I topped my chicken crust with gooey cheese, fresh basil, cherry tomatoes and spicy red pepper flakes. But, the world is your oyster.
Feel free to follow my recipe completely or to swap out the toppings and create another kind of pizza like hawaiian or pepperoni. It's your call! However, I'd select a style that will go well with chicken flavouring. This is a chicken crust pizza, afterall.
So, what exactly does this chicken crust margherita pizza taste like? Well, it tastes like chicken. Please, please don't expect this recipe to taste like a Chicago Deep Dish pizza with bread crust, because you'll be disappointed.
Instead, enjoy it for what it is: a keto pizza crust recipe. And, a delicious one at that.

Are keto pizzas healthy?
One of the benefits of keto pizzas is that they are super filling. That's thanks to the high amount of protein and fat in each slice.
In case you didn't know, both protein and fat take more energy for you to digest than carbohydrates. For that reason, your stomach empties at a slower rate and you end up feeling full for longer.
On top of that, protein reduces your level of the hunger hormone ghrelin. It also boosts the levels of peptide YY, a hormone that makes you feel full. This can be advantageous if you're trying to lose weight. The more satiated you feel, the less calories you'll consumer overall.
Let's just say you won't be snacking any time soon after eating this chicken crust margherita pizza.
Cooking Tips
What kind of chicken should you use?
There are three primary ways to make chicken crust pizza.
- Chicken crust pizza with shredded chicken
- Chicken crust pizza with ground chicken
- Chicken crust pizza with canned chicken
This recipe uses ground chicken because it's the most delicious in my opinion.
You can either make your own ground chicken using a food processor, or you can buy ground chicken from the grocery store.
If you want to swap ground chicken out for one of the other options, you can. You will substitute the 1lb of ground chicken for ¾ lb shredded or ¾ lb canned instead. For both, you'll want to cook for between 15-20 minutes.
If you're using canned chicken, ensure it's pre-cooked and drain well before using.
The best way to make the chicken crust pizza dough
Okay, so it's not really "dough". But, you get the idea.
Consistency
While the consistency will vary depending on the type of chicken used, the mixture should turn out fairly dense and dry. You'll also want to be able to press it together without it crumbling apart. Think of aiming for a texture similar to an uncooked meatball or hamburger.
If the mixture is too dry, add in more egg. If the mixture is too wet, add in more parmesan. Repeat until you're happy with the consistency.
Cooking
No carb pizza crust cooks best when it's thin. You'll want to aim for a ¼ inch thickness to ensure it cooks thoroughly.
If you have a pizza stone, use it. This can help achieve a good and crispy texture when it's cooked, but it's definitely not a necessity. If you don't have a pizza stone, make sure you use parchment paper as a base. The mixture sticks very easily, so this is a must!
Cooling
Finally, resist the temptation to add toppings and dig in right away. You want to let the crust sit for ten minutes. This will allow the cheese to form a seal on top that protects the crust from absorbing all the sauce. It's a crucial step!
Once you add the sauce and ingredients, you can pop it back in the oven to warm it up.
Can you freeze the chicken crust?
Sure can. All you need to do is wrap it tightly after it cools. Ensure it's freezing on a flat surface so it doesn't lose its shape.
When you're ready to eat it, you don't even need to defrost it. Simply remove the chicken pizza crust, add sauce and toppings and place in the oven until hot.

- 1 lb of ground chicken
- ½ cup of mozzarella cheese, shredded
- ¼ cup of parmesan cheese, grated
- 2 eggs, whisked
- 3 cloves of garlic, minced
- 1 teaspoon of italian seasoning
- ½ teaspoon of salt
- ¼ teaspoon of pepper
- 1 tablespoon of chopped fresh basil
Toppings
- ½ cup tomato sauce or pizza sauce
- fresh basil, chopped
- cherry tomatoes, halved
- red pepper flakes
- ¼ cup of mozzarella cheese, shredded
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- In a bowl, mix ground chicken, mozzarella cheese, parmesan cheese, eggs, garlic, italian seasoning, salt and pepper. Fold in chopped basil.
- Place chicken mixture between two sheets of parchment paper. Gently spread into a circular pizza shape that's roughly ¼ inch thick. When finished, remove top piece of parchment paper.
- Bake until edges start to turn brown, roughly 35 minutes.
- Remove from oven and let crust rest for 10 minutes.
- Add sauce and toppings as desired.
- Return to oven for 10 minutes until cheese is melted.
- Place under broiler for 2 minutes to brown cheese.
- Remove from oven and enjoy.
